OWNER + HEAD CHEFELI MARROQUINI started this business in May 2015, making salsas from all fresh ingredients at the Portland Mercado, and selling them in high-end stores. Today I make pupusas, tacos, salsa, and more at my brick and mortar location on the Redd campus. I offer event catering, to go, and take home meals.
I grew up and used to make salsa in Guatemala with wood fire and what we call a comal, which is like a clay flat-top. We used that to roast the tomatoes, onion, and garlic.
